Dissolve yeast in water/set aside.
Put flour and salt into a food processor. Pulse. Pour water and yeast in steady stream as the food processor is running. Turn off the processor. Add the oil and pulse 4 times. Scrape out dough onto lightly
floured surface. (Mixture will be very sticky) You may want to dust with flour as you shape it into a mound with your hands. Raise for 45 minutes.
Divide into 4. Flatten one section into a tortilla shape. Twirl with knuckles underneath to loosen dough. Roll it out onto a baking sheet. I make mine an oval. This recipe is best as a thin crust-so spread it out as much as possible without tearing. You can dust with flour and freeze the remaining crusts in ziploc bags to thaw and use another time.
Topping
4 oz. (per pizza) feta cheese crumbles
2 tbs. olive oil
1 tsp. of Goya Adobo seasoning/ You can purchase this in the Spanish foods aisle or mix your own (garlic powder, salt, pepper, oregano)
fresh basil leaves
dried oregano
1 small broccoli crown
2 scallions
1/4 of a med. ripe tomato (diced)
3/4 cup of mozzarella cheese or your favorite pizza blend
Parmesan cheese
1/4 cup of sliced black olives (optional)
Lightly steam the broccoli and scallions until tender. (don't over-cook) Set aside to cool. Take the olive oil and smooth it evenly over the entire crust with a large spoon. Evenly sprinkle 1/2 teaspoon of Adobo seasoning onto the crust. Add feta cheese crumbles evenly. Add 1/2 of the mozzarella cheese. Cut the broccoli into small florets. Slice the scallions. Add the broccoli and scallions to the pizza. Top with the remaining mozzarella. Add the diced tomato and black olives. Sprinkle 1/2 tsp. of the Adobo seasoning evenly over the pizza. Add a light dusting of parmesan cheese. Top with fresh basil leaves and a light sprinkle of dried oregano.
Bake the pizza in a pre-heated 500 degree oven for 10 - 12 minutes. Cooking times will vary slightly -especially if you cook two at once.
Crust should be golden brown on the bottom and sides and a little crispy on the edges.
I make many variations of this recipe.

Try artichokes and vegetarian sausage (pre-cooked Boca Italian )
Shrimp and sausage
Asparagus and roasted red pepper

1 package of yeast (2 1/4 tsp.)
1 1/2 cups of very warm water
4 cups of all purpose flour
1 1/2 tsp. of salt
