Stella's Yard Apple Cake
Cake ingredients:
3 eggs
2 cups granulated sugar
1 1/2 cups oil
2 tsp. vanilla
3 cups flour
1 tsp. salt
1 tsp. cinnamon
3/4 tsp. baking soda
3 cups Granny Smith apples, peeled and chopped (3 to 4 medium)
1 cup chopped pecans or walnuts
Topping ingredients:
1 cup brown sugar
1/4 cup milk
1/2 cup butter
Preheat oven to 350 degrees. Grease and flour a Bundt pan. In a large bowl, mix eggs, sugar, oil and vanilla. Sift together dry ingredients; slowly add to egg mixture. Fold in apples and nuts. Turn into prepared pan. Bake about 1 hour, or until done.
Topping: Place ingredients in a saucepan and bring to a boil. Lower heat and continue to cook 3 more minutes. When cake is done, remove from oven and let cool. Invert onto serving plate and pour topping over cake. Makes 16 servings.
* Hint: I poke holes into the top of the cake and drizzle the topping over the cake repeatedly until most of it has been absorbed into the cake.
